Tuna Hummus Salad Sandwich

Tuna Hummus Salad Sandwich

This Tuna Hummus Salad Sandwich recipe is inspired from a friend of mine who let me try a packed lunch she had for her and her son during a play date at an indoor sports complex.  Not one for mayonnaise, she came up with a delicious chickpea and carrot-spiked version that her son enjoys.  Being the Aldi girl that I am, I decided to try to come up with something as fabulous with some ingredients I happended to have from that store and it came out better than one can expect!  If you don’t have an Aldi near you have no fear, this is a fantastic recipe that can be doctored up with any brand of ingredients.

My version has four main ingredients and one important equipement – a food processor.

Simply add in two cans of well drained tuna to bowl. Not so yummy looking – yet.

Next add in the carrots.

Last is the Cilantro Jalapeno Hummus.  If you don’t have that plain hummus will do.

Pulse until the carrots are chopped.  Then take a taste.  This is when you’ll decide if you need a little more hummus or salt and pepper.

Then process until carrots are diced but still well visible.  You don’t want to go over board and end up with pink paste.

I happened to pick up this  amazing freshly baked bread while at Aldi, so I decided to use it this time around.

TUNA HUMMUS SALAD SANDWICHES

2 cans of chunk tuna in water

1 1/2 cups carrots (give or take)

1/3 cup of cilantro jalapeno tuna (or plain hummus with a 2 tablespoons of cilantro)

salt and pepper to taste

8 slices of bread

Add Tuna, carrots and hummus to food processor bowl.  Pulse until somewhat incorporated. Give the salad a taste and add in more hummus, or salt and pepper if necessary.  Pulse slightly again.  Spread on the sliced bread.  Makes at least 4 sandwiches.  Great for lunch boxes.
