Ideas for Leftover Apples

I face this dilemma each and every Fall after I have gotten extra zealous with my apple purchases. There are so many great varieties to try its hard to resist the urge to buy some new ones to try. Although tart Granny Smith is my preferred choice, I am particular to a seasonal Zestar variety we pick up at Ten Ecyk Apple Orchard in Brodhead, WI. Family-owned since 1839, this beautiful farm is worth visiting for its wide-variety of apples, over 50, being harvested each year.

So what to with all those leftover apples?  The ideas are endless, here are some great options.

  • Grate up an apple or two and add to a favorite banana or zucchini bread recipe
  • Slice up 3 applies and add to a pan of melted butter.  Saute until softened and add in 2 Tbs of browns sugar
  • Add 2 peeled and diced apples and a 1/2 tbs of cinnamon to your pancake mix
  • Put sliced apples on a tortilla spread with a layer of peanut butter.  Top with another tortilla and grill in a pan.
  • Add sliced apples to your next grill cheese sandwich
  • Core an apple and slice horizontally into rings, sprinkle with cinnamon and roasted on a well oiled pan for 15 minutes at 425 degrees
  • Add peeled diced apples to your butternut squash soup, cook and then puree until soup is smooth
  • Thinly slice and toss in a green salad with chopped walnuts and blue cheese.
  • Add 2-3 peeled sliced apples to a pot with a cup of apple juice and boil until the softened homemade apple sauce
  • Core and slice in 2 apples in half. Add to your casserole dish as you roast chicken.

I will probably come up with a few more uses this Fall, but this list ways will be a good start.  What are some ways you use up your leftover apples?
